Dill Pickle Cucumber Slices
Makes 1- 1/3 cups
Recipe from Sara Moulton
Ingredients:
One 5-to 6 inch-inch piece seedless ( English) cucumber
Note: I used 4-6 small kirby cucumbers
2 tablespoons fresh dill leaves or 1 teaspoon dried
2 tablespoons cider vinegar
1- 1/2 teaspoons sugar
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Directions:
Thinly slice enough of the cucumber to make 1-1/3 cups. Finely chop the dill (about 1 tablespoon). Combine the cucumber with the vinegar, dill, sugar, salt, and pepper in a small nonreactive bowl. Set it aside at room temperature and use within an hour, or cover and refrigerate for later use.
Enjoy!

Velva...thanks for reminding me that I could make these simpler veggie dishes and enjoy them immensely. We have an apple cider vinegar producer not far...hence, I will try making your cucumbers with this small substitute. Thanks for the idea ;o)

When I was a kid, I hated dill. And would get so mad when my parents put it on cucumbers (even though I loved dill pickles). Now, I'm a big fan of fresh dill. These are so simple and delicious :)

One of my favorite ways to enjoy cucumbers is tossed with some sugar and cider vinegar. I've never tried adding dill though, even though I know many people do. Either way, it's a perfect summer side dish and I"m thinking it's time to get some dill in my next batch!
