Insalata Caprese
Serves 4
Ingredients:
2 pounds vine-ripened tomatoes, sliced
1 pound fresh mozzarella, sliced
1/4 cup fresh chopped basil
3-4 tablespoons Extra Virgin olive oil
Fine sea salt to taste
Freshly ground black pepper to taste
Directions:
On a large platter, arrange tomatoes and mozzarella alternating and overlapping them. Season with sea salt and black pepper. Add chopped basil. Drizzle with olive oil.
Enjoy!

The way you put this together is completely stunning. It is very hard to find those beautifully coloured tomatoes here in the UK, but if i do come across them, I'd love to serve them just like this.

I thought of this salad just yesterday because of the abundance of our mountain-style tomatoes (similar to the heirloom ones in the US). Looks delightful!

that is the best looking Insalata Caprese I have ever seen in my life....Its so pretty I wanted to cry.....a work of art!! those different colour tomatoes really set it off!
as for the magazines, if you hover over the words BBC good food, delicious, Donna Hay and Woman and home they are linked to the magazines web sites and you can see them there....the BBC also has a few other good magazines too...If there is a Barnes and Noble around you go in and see if they carry them, I just sit there and read them and make notes now....they run about $10 each....
