Slow-Cooked Scrambled Eggs with Fresh Herbs

Eggs are still struggling in their underrated status as only a breakfast food. I am not sure why, eggs are a very inexpensive low-calorie source of protein and are delicious served alone, or incorporated into other dishes.

I am lucky to have a co-worker who raises heirloom chickens. She provides me each week with a couple dozen fresh eggs in the most beautiful shades of pink, green and brown.  Her chickens have access to grass and pasture which means that her eggs have less cholesterol, less saturated fat, more vitamins A and E and more omega-3's. More importantly, they taste amazing.

Make an effort to frequent a local farm or farmer's market to purchase fresh eggs. You will not be disappointed.

Eggs grace our table at least twice a week for dinner.  Here is a version of scrambled eggs that are creamy, flavorful and easy to prepare any time of day.


Slow-Cooked Scrambled Eggs with Fresh Herbs
Serves 6
Recipe from Barefoot Contessa

Ingredients:
16 extra-large eggs
1-1/4 cups half-and-half
2 teaspoons kosher salt
1/2 teaspoon freshly ground pepper
4 tablespons (1/2 stick) unsalted butter, divided
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped scallions, white and green parts
1 tablespoon finely chopped fresh dill

Directions:
Whisk the eggs in a bowl with the half-and-half, salt, and pepper.  Heat 2 tablesppons of butter in a large saute or omelet pan.  Add the eggs and cook them over medium-low heat, stirring constantly, until the desired doneness.  Turn off the heat, add the remaining 2 tablespoons of butter, the parsley, scallions, and dill. Stir until the butter is melted.  Check for seasonings. Serve hot.

Velva- these look fantastic! I have been wanting to try the eggs at our local farmers market. I bought their grass fed beef for my husband and cooked it up last week...he really enjoyed it!

As for your comment, I teach group fitness classes ~ 4-5 per week. Its part of my job to workout! :)

I suddenly remembered when you had all those eggs and worked your way through them all. Wasn't it like 5 or 6 dozen eggs?

At any rate, these look fantastic and I especially love that they have dill. Dill is steadily turning into my favorite herb. A very tasty dinner, indeed!!

Velva, I completely agree with you eggs should be eaten any meal of the day. When I feel lazy to cook a big meal, I make eggs for dinner or lunch and as you said it's so nutrious, easy and tasty! In fact, I made eggs with mushrooms, potatoes and asparagus for dinner just the other night. Eggs with herbs similar to your recipe turn out just fantastic!

I have a love affair with eggs too. They're so full of protein and so affordable and I also eat them for any meal of the day. If I had to be stranded on a desert island with only one food to choose, it would be eggs. (of course I'd whine and complain until I got cheese too.)

This recipe makes me think of my grandpa, he always used to serve me scrambled eggs with dill mixed in them. I loved them! I started serving them that way to my daughter so now some days she asks "can I have the eggs with the green stuff, mom?" :) Its definately not something I would ever think of adding, but once u try them that way, they are delish!

I can get farm fresh eggs now at the farmers market thank heavens. A sprinkling of fresh herbs is all the dressing up they need...and with a slice of homemade toast they're perfect.

I made Julia's 1/2 hour eggs once... i thought I would die from stirring and the heat was so low... the effect was everything she said, of course, creamy and perfect... must try with 1/2 and 1/2 instead of cream~

Pink and green eggs - I'd love to see that! I really should serve eggs for dinner sometimes, they're so delicious and something even my youngest (and pickiest) daughter will eat, though my older (and very un-picky) daughter will not - go figure. :)

When I have time, I do scramble eggs, the French way, that is in a double boil. THis alternative sounds easier, I have to try it!

I love eggs too. You make me green with envy when you write about the continuous access to fresh, heirloom eggs. Most eggs we get in supermarkets have very little flavor with only the palest of yellow yolks. I try and chase down farm-fresh eggs with deep orange yolks, just as I remember them from my childhood in Amsterdam.

This looks like a great recipe. Half-n-half in scrambled eggs sounds downright sinful :)

i love egg scramble and with all these herbs it's such a temptation........slow cooked scramble really makes a difference and it is easier when making larger quantity i suppose.

Have you ever tried cooking scrambled eggs in a bowl over boiling water? They are so fluffy and good that way. I blogged that some time ago. Yummy on the fresh herbs.

We just started getting farm fresh eggs about 3 weeks ago. The one thing that drives me nuts about them though, is the inconsistency of size! I'll get used to it though.

Heirloom chickens? How interesting! We started buying local farm fresh eggs from pastured chickens this year. I absolutely love them! The colors, the sizes, they are just so natural. And you can't beat the flavor and texture. Nothing like those bright yellow yolks.
