There are million ways to use fresh blueberries and one way to celebrate the season is by preparing this never tiring blueberry crunch recipe. Blueberries are perfect for baking as the heat increases the intensity of the sweetness in the berry.
My friend Jena has been sharing meals with me for over twenty-years, and one of her recipes that has graced our table more times than I could ever count is her recipe for Blueberry Crunch.
Blueberry Crunch
Serves 8
Recipe compliments of Jena
Ingredients:
1 can crushed pineapple, 20 ounces, do not drain
3 cups fresh blueberries, fresh or frozen
3/4 cup sugar (optional)
1 package yellow cake mix
1 stick butter, melted
1/4 cup sugar (optional)
1 cup pecans, chopped (optional)
Directions:
Butter a 9X13-inch baking dish
Layer 1: Put crushed pineapple on the bottom of the pan
Layer 2: Pour blueberries over the pineapple
Layer 3: Pour dry cake mix over blueberries
Layer 4: Sprinkle 1/4 sugar and chopped pecans on top
Optional: Sprinkle 1/4 cup sugar in between each layer ( if you like it really sweet!)
Bake at 350 degrees approximately 45 minutes
Top with vanilla ice cream or whipped topping
Note: You may replace sugar with Splenda

I love blueberries. I haven't been able to find a blueberry farm here. When I lived in Kansas City picking blueberries was an annual summer tradition. I never would have thought of pineapple and blueberries. I'll have to give this one a try.

This is an interesting recipe with the pineapple in it. Don't think I have ever mixed blueberries with pineapple, except in a fresh salad. I'd love this. Maybe a scoop of ice cream on top?

Blueberries are to the East Coast what olallieberries are to the West Coast of California & Oregon. Blueberries are expensive to buy, here. Who knew to combine pineapple with blueberries? Monticello...that reminds me of the days when I worked for Winn-Dixie and had to visit the store on Jefferson (#3). I just googled it and can't believe it is STILL store #3. Please tell me that they 100% remodeled it and just didn't change the store number because it needed replacing 15 years ago :)

I'm going to try this with the huckleberries we pick in July. Hucks are a lot like blueberries, but a little sweeter. The pineapple sounds like a delicious adder!

Oh, I'm so jealous of your berries. :) There is a farm about an hour from here and I've been trying to get there, but haven't been able to work it out yet. They are saying they could have an extended season into August this year so I have my fingers crossed for more time!
