Blueberry Crunch

It's blueberry season! In North Florida, this season only lasts one month from June 1-June 30th and we take advantage of it. This past weekend we drove to Green Meadow Farm in Monticello, Florida and picked our annual supply of fresh blueberries.  My freezer is now stocked with blueberries!

There are million ways to use fresh blueberries and one way to celebrate the season is by preparing this never tiring blueberry crunch recipe. Blueberries are perfect for baking as the heat increases the intensity of the sweetness in the berry.

My friend Jena has been sharing meals with me for over twenty-years, and one of her recipes that has graced our table more times than I could ever count is her recipe for Blueberry Crunch.

Blueberry Crunch
Serves 8
Recipe compliments of Jena

Ingredients:
1 can crushed pineapple, 20 ounces, do not drain
3 cups fresh blueberries, fresh or frozen
3/4 cup sugar (optional)
1 package yellow cake mix
1 stick butter, melted
1/4 cup sugar (optional)
1 cup pecans, chopped (optional)

Directions:
Butter a 9X13-inch baking dish

Layer 1: Put crushed pineapple on the bottom of the pan

Layer 2: Pour blueberries over the pineapple

Layer 3: Pour dry cake mix over blueberries

Layer 4: Sprinkle 1/4 sugar and chopped pecans on top

Optional: Sprinkle 1/4 cup sugar in between each layer ( if you like it really sweet!)

Bake at 350 degrees approximately 45 minutes

Top with vanilla ice cream or whipped topping

Note: You may replace sugar with Splenda

Enjoy!

I love blueberries. I haven't been able to find a blueberry farm here. When I lived in Kansas City picking blueberries was an annual summer tradition. I never would have thought of pineapple and blueberries. I'll have to give this one a try.

Love it! Looks divine!

crunch, crumble, buckle or cobbler - the blueberry is the one for the job! I love living in the North East if only for the blueberries - they are way so expensive in New Mexico...

My two blueberry bushes are showing signs of fruit. Now I just need a pineapple tree! I am going to try this as that sweet pineapple addition sounds so summery and a nice change.

I like the sound of it.

We managed to pick about 3 quarts yesterday before a storm hit the house.

I put 2 qts in the freezer and was looking for something to make out of the ones in the fridge. Think I'll give this a try tonight.

Refreshing and delightful! I see so many wonderful recipes here, besides the one you feature, that I go around for a while, tasting this and that. Today, I see your spinach and avocado. Put it together with your sweet sensation, and a great luncheon is on its way. Thank you Velva!

Definitely bookmarking this. Blueberries have been CRAZY on sale around here. I keep buying 3 containers at a time, looking for awesome recipes, and then just eating them up plain. Oops. I just love them so much!

Aren't you loving the blueberries, Velva??
This is an interesting recipe with the pineapple in it. Don't think I have ever mixed blueberries with pineapple, except in a fresh salad. I'd love this. Maybe a scoop of ice cream on top?

Ahh, blueberries! This looks like a healthier, fresher version of something we used to make called dump cake.

Meanwhile, Velva, I wanted to invite you and any of your readers to participate in the July Culinary Smackdown - I've just posted the theme and details on my blog. I'm sure you'd come up with a tantalizing entry!

Blueberries are to the East Coast what olallieberries are to the West Coast of California & Oregon. Blueberries are expensive to buy, here. Who knew to combine pineapple with blueberries? What an interesting combo. This dish would be gone in no time flat. Great comfort food. I'm baking all kinds of berry pies. so summer!

Anything concocted with blueberries and containing the word "crunch" is going to interest me, and this dessert is no exception; love the idea of adding the pineapple!

Monticello...that reminds me of the days when I worked for Winn-Dixie and had to visit the store on Jefferson (#3). I just googled it and can't believe it is STILL store #3. Please tell me that they 100% remodeled it and just didn't change the store number because it needed replacing 15 years ago :)

This dish would have gone great with our vanilla ice cream that we made two weeks ago.

I'm going to try this with the huckleberries we pick in July. Hucks are a lot like blueberries, but a little sweeter. The pineapple sounds like a delicious adder!

Nothing else is as special as blueberries! We still have to wait a while before they are in season; your recipe is tempting.

Pineapple with blueberries sounds so good! For my recent entry to Cupcake Hero I was considering a pineapple/blueberry combination. This looks super-easy and delicious!

Oh, I'm so jealous of your berries. :) There is a farm about an hour from here and I've been trying to get there, but haven't been able to work it out yet. They are saying they could have an extended season into August this year so I have my fingers crossed for more time!
