Lemony Potato Salad
Serves 4-6
Recipe from Food Network
Ingredients:
2 pounds russet potatoes (note: I used small red skinned, without peeling), peeled and cut into 3/4-inch chunks
1/2 cup mayonnaise
1 tablespoon chopped fresh parsley
1 lemon
1-1/2 teaspoon salt
Freshly ground pepper to taste
1-1/2 teaspoon salt
Freshly ground pepper to taste
Directions:
Place the potatoes in a pot of salted water; bring to a simmer and cook until tender. Drain and cool slightly. Mix the mayonnaise and parsley in a large bowl. Grate in the zest of half of a lemon; add the juice of the lemon half. Fold in the potatoes and add 1 1/2 teaspoons salt, and pepper to taste; refrigerate until ready to serve.

The simplest potato salads are the best. This looks like a great side for all those barbeques I plan on having if it ever warms up in Colorado.
I'm not terribly fond of regular potato salad but I could totally do this one and I think my kiddos would enjoy it, too. They're extremely fond of lemon in their savory foods.

Love that the ingredient list is short and yields an awesomely yummy potato salad. I usually find them too... eggy, milky, sickening...but lemon in these totally fix that!
